Baking with Ethan

For Ethan's birthday, we had a dinosaur theme party. So what better thing to bake, than dinosaur cookies?! Ethan and I have made these cookies many times. He practically knows the recipe by heart. It's our favourite roll-out cookie recipe as you don't have to chill the dough, courtesy of Wilton.

With all the excitement about his birthday, I forgot to photo document each step, so my apologies.

Roll Out Cookies
1. Preheat oven to 400F.
2. In large mixing bowl, cream 1 cup butter with 1.5 cups sugar until light and fluffy.
3. Add 1 egg, 1.5 tsp vanilla and .5 tsp almond extract. (Depending on our mood, we may substitute the almond for orange or peppermint.)
4. Mix 2 3/4 cups flour, 2 tsp baking powder, and 1 tsp salt.
5. Add flour mixture to butter mixture 1 cup at a time, mixing well after each addition.
6. Roll out dough and cut into shapes.
7. Bake for 6-7 minutes.

Wow! I baked sugar cookies last night - just the kind you drop by teaspoonful - and the came out burnt on the bottoms and crisp on the edges. I think Ethan should give cooking classes. He does better than this grandma!

Probably my favorite photo of an American Flag this year. (And I took lots of them!) There is something indescribable about an 8 year olds' perspective. Thanks for sharing.
